Zucchini Relish

Ingredients
  

  • 6 cups chopped Zucchini approximately4 medium
  • 2 cups chopped Red Onions
  • 2 cups chopped Red and Yellow Peppers

Method
 

  1. Chop zucchini, onion, and peppers into a 1/4" dice with vegetable chopper.
  2. Combine zucchini, onion, and peppers in a large bowl. Sprinkle with salt and cover with cold water. Let stand two hours. Do not stir.
